I was given a Tanabe Hyper Medallion Exhaust system today that was originally design (and customized with dual tips) for some model Lexus. Ultimately, a business associate's business had this left over after a customer changed their mind. They wanted it gone from their shop, so I took it off their hands.

My thoughts were to take this down to a local muffler shop, have them cut off the existing tips and replace with a single tip and then custom welded to the stock exhaust piping, essentially replacing the OEM mufflers that are on the car now.

You think there would be any reason not to do this?

You should be okay the only benefits you will not get compared to a complete system is that you will still have stock diameter piping.

Go for it Scott.  I would guess that your main benefits by doing this will be looks and sound, with minimal performance gains.  It will probably give you what you want as long as the end result isn't a loud exhaust.
