Does changing the thermostat in our cars make a difference like it does with big block V8's for example?

Some guys do it, but they have built motors.  You probably won't notice a difference.  Since you have a J30, Paul would be a better person to ask that question.  BTW, technical questions are not supposed to be posted in the "General Discussion" forum.  There is a J Series performance forum that it would have been better suited for.  I have moved it there for you.  Just try to remember that next time please.
